As promised yesterday…….
Ingredients
- 600g chicken thigh fillets fat trimmed (I used breast fillets because that’s what I had)
- 1 finely chopped brown onion
- 2 crushed garlic cloves
- 1 finely chopped green chilli
- 3cm fresh ginger, peeled and grated
- 1 tablespoon curry powder
- 425g can diced tomatoes
- 1 tablespoon coconut milk powder ( I actually threw in a can of coconut milk which made it runnier but toned down the spices a bit for the kids)
- 3/4 cup (uncooked) basmati rice
- 12 small pappadums (to serve)
- 1/3 cup mango chutney(to serve)
Method
- Cut each fillet into 4 pieces. Spray a large non-stick frying pan with oil. Add the onion, cook stirring for a5 minutes or until softened, add the garlic, chilli, ginger and curry powder and 2 tbs water. Cook for 1 minute or until fragrant.
- Add the chicken to the pan. Stir to coat. Add the tomatoes. Bring to the boil. cover. reduce heat to low. Simmer for 45 mins. Season, stir in the coconut milk powder. Cook the rice following the packet instructions.
- Spray the pappadums with oil. Cook the the microwave in batches of 3 on high for 30 secs or until crisp. Heat the spinach and combine with the rice. Serve with the curry, pappadums and mango chutney.
This dish was really tasty and I can confidently say I will be making it again. Even all the kids at it without complaint, and that, my friends is what we call a miracle.
